Cheesecakes have been around since the 5th century BC. They've changed a lot since then of course, but we still love them! This white chocolate cheesecake requires no baking and will be your go-to weekend treat.
100 g biscuits 40 g butter 250 g cream cheese 100 g caster sugar 175 g white chocolate 150 ml double cream 1½ tsp vanilla extract
Crush the biscuits and mix them with melted butter. Push this mixture into a greased tin and refrigerate.
Whip the double cream into stiff peaks. Melt the white chocolate in a microwave for 20 seconds at a time.
Add the cream cheese, caster sugar, and vanilla extract, and whisk into the cream and white chocolate mixture until combined and thick.
Add the cheesecake mixture to the cooled crust, refrigerate until set and serve cold with crushed biscuits on top.
