South Indian Cheese Uthappa is a twist to the traditional recipe. This crispy yet soft dosa is loaded with veggies and topped with melted cheese. Perfect for breakfast or a snack.
1 cup dosa batter ½ small onion ½ small tomato 1 small green chili Fresh coriander leaves ¼ tsp cumin seeds ¼ cup grated cheese Salt to taste 1 tsp oil or ghee for cooking
In a small bowl, mix the chopped onions, tomatoes, green chili, coriander leaves, cumin seeds and a pinch of salt.
Heat a non-stick pan or tawa over medium heat and grease it lightly with oil or ghee.
Pour a ladleful of dosa batter onto the pan and spread it into a thick, round circle (like a pancake).
Quickly sprinkle the vegetable mixture evenly over the uthappa and gently press down so it sticks to the batter.
Sprinkle the grated cheese generously over the vegetables.
Drizzle a little oil around the edges and cook on low heat until the base turns golden brown. Flip carefully and cook the other side until the cheese melts.
Serve the cheese uthappa hot with coconut chutney or sambar.
