Rabdi is a traditional Indian dessert that can be relished as is or is used as a rich garnish for other sweets. To make it more indulgent, you can make mango rabdi before the seasonal fruit perishes.
1 litre full-cream milk 2 raw mangoes 2 tablespoons sugar ¼ teaspoon cardamom powder 2 tablespoons chopped nuts Chopped mango (for garnish)
Heat and simmer milk and keep stirring till it reduces to about 1/3 of its original volume.
Once the milk is thickened, add sugar, cardamom powder, and chopped nuts.
After you get the desired consistency, remove the heat and let the rabdi cool.
Blend raw mangoes to make a puree and fold it in the rabdi.
Refrigerate for at least 2 hours, garnish with chopped mango pieces, and serve.
