The Gujarati delicacy called khandavi is created from a savoury batter of chickpea flour. It's a tasty and nutritious snack that works for any situation.
1 cup besan (chickpea flour) 1 cup yogurt (dahi) 2 cups water 1/2 teaspoon turmeric powder 1/2 teaspoon ginger paste Salt, to taste 2 tablespoons oil 1 teaspoon mustard seeds 1 teaspoon sesame seeds A pinch of asafoetida (hing) Fresh coriander leaves, chopped (for garnish)
To make a smooth batter, combine the besan, yoghurt, water, turmeric powder, ginger paste, and salt in a mixing dish.
Now heat a non stick pan, Pour the batter and stir frequently, or until the batter thickens.
Now spread the batter onto a big dish or greased surface to cool for 5 to 10 minutes.
Use a knife or pizza cutter to cut the batter into long strips once it has cooled.
Place each strip on a serving platter after firmly rolling each one. Now in a pan heat oil and add mustard seeds.
Once they start to splutter, add sesame seeds and asafoetida, and sauté for a few seconds.
Now Pour the tempering over the rolled khandavi and garnish with fresh coriander leaves. Serve and enjoy!
