This hearty chickpea sandwich is a protein-packed delight, perfect for a quick and nutritious meal. Packed with plant-based goodness, it's a flavourful and filling option for any time of day.

1 can chickpeas, drained and rinsed ¼ cup Greek yoghourt 2 tbsp lemon juice 2 tbsp chopped fresh parsley ¼ tsp cumin Salt and pepper to taste 4 slices whole-grain bread 1 cup baby spinach leaves ½ cucumber, thinly sliced 1 small red onion, thinly sliced

In a bowl, mash chickpeas with a fork or potato masher until chunky.

Add Greek yoghurt, lemon juice, parsley, cumin, salt, and pepper. Mix well.

Toast the whole-grain bread slices. Spread chickpea mixture onto two slices of bread.
