Beetroot raita is a vibrant, refreshing side dish with grated beetroot and creamy yoghurt. Its earthy sweetness, balanced with spices, adds colour and flavour to any meal. Nutritious and cooling, it pairs beautifully with Indian dishes.
1 medium-sized beetroot 1 cup yoghurt 1/4 tsp roasted cumin powder 1 green chilli 1 tbsp fresh coriander leaves Salt A pinch of black salt
Wash the beetroot thoroughly and boil it in water until tender (or pressure cook for 2-3 whistles). Let it cool, then peel and grate the beetroot.
Whisk the yogurt in a mixing bowl until smooth. Add the grated beetroot to the yoghurt.
Mix in roasted cumin powder, green chilli, salt, and black salt. Stir well.
Sprinkle with chopped coriander leaves for a fresh finish.
Serve the beetroot raita chilled or at room temperature alongside rice, parathas, or as a refreshing side dish.
