Ingredients

– 3 ripe bananas, mashed 1/3 cup melted butter 1 large egg, beaten 1 teaspoon vanilla extract –1 cup all-purpose flour 1/2 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 1/2 cup brown sugar (packed) 1/2 cup butterscotch chips

Step 1

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly. In a large bowl, combine the mashed bananas and melted butter. Stir in the beaten egg and vanilla extract until well mixed.

Step 2

In another bowl, whisk together the flour, baking soda, baking powder, salt, and brown sugar. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
