Litchi is an impeccable fruit that is naturally sweet and juicy. The fruit is an incredible ingredient for making a rich pudding. Here is a quick 6-step recipe that you can follow to make the litchi pudding at home.
Milk - 2 cups Sugar - 1/3 cup Litchis chopped - 1.5 cups Condensed milk - 300ml Heavy cream - cup Custard powder - 3 tablespoons Gelatin powder - 1 tablespoon Vanilla extract - 1 teaspoon
Make the custard by heating together milk, sugar, and custard powder.
While the custard simmers, add gelatin powder to some cold water and let it sit.
Turn off the heat and mix in the gelatin paste with condensed milk and vanilla extract.
In another bowl, whip some heavy cream with a blender or mixer.
Fold the whipped cream into the cooled custard mixture along with chopped litchis.
Refrigerate the litchi pudding for about 4 hours and serve.
