These Chilli Cheese Noodles are a perfect blend of spicy, cheesy, and creamy flavours, making them an ideal quick meal for one during the monsoon season.
100g noodles (dry weight) 2 tbsp vegetable/sunflower oil 2 garlic cloves, finely chopped 1 spring onion, finely sliced 1 chilli, finely chopped 1/2 tbsp light soy sauce
1/2 tbsp dark soy sauce 1 tbsp white wine vinegar 2 tbsp cream cheese 2 tbsp grated cheese (cheddar, parmesan, etc.) 1 tsp sugar/honey
Cook the noodles as per the package instructions.
Heat the oil in a small saucepan over high heat until sizzling hot.
Add garlic, spring onion, and chilli to a medium-sized bowl. Pour the hot oil over the garlic mixture and stir to combine.
Add light soy sauce, dark soy sauce, white wine vinegar, cream cheese, grated cheese, and sugar/honey.
Mix in 2 tbsp water and stir until well combined. Toss the cooked noodles in the sauce until fully coated. Serve immediately.
