These cutlets are an all-time favourite snack in India. They are crispy on the outside and soft on the inside, making them a delicious option for tea time or as an appetiser, especially in the rain.

Ingredients

2 potatoes 1/2 cup carrots 1/2 cup green beans 1/2 cup green peas 1/2 cup cauliflower 1/2 cup bell peppers 1 onion 2-3 green chilies 1-inch piece of ginger 2-3 garlic cloves

Ingredients

1 tsp cumin seeds 1 tsp coriander powder 1 tsp garam masala 1 tsp red chilli powder 1/2 tsp turmeric powder 1 tsp chaat masala Fresh coriander leaves 1/2 cup breadcrumbs 2 tbsp maida

Step 1

Boil the potatoes, then peel and mash them. Boil the carrots, green beans, green peas, and cauliflower and lightly mash them too.

Step 2

In a bowl, combine the mashed potatoes and lightly mashed vegetables. Add the finely chopped bell peppers, onions, green chilies, ginger, garlic, cumin seeds, coriander powder, garam masala, red chilli powder, turmeric powder, chaat masala, and salt.

Step 3

Add the breadcrumbs and chopped coriander to the mixture. Take a small portion of the mixture and shape it into a round patty.

Step 4

In a small bowl, mix the all-purpose flour with a little water to make a thin slurry. Dip each cutlet in the slurry, then coat it with breadcrumbs.

Step 5

Heat oil in a pan and fry the cutlets until golden brown and crispy on both sides.
