A combination of bright beetroots and lentils, this Beetroot Kootu from Tamil cuisine is a heartwarming comfort food that you must have in autumn and winter months. Check out the recipe and give it a try now.

1 cup beetroot, peeled and chopped 1 cup yellow moong dal, soaked Salt, to taste 3 cups water ¼ cup coconut, grated 2 dry red chillies 1 tsp cumin seeds 1 sprig curry leaves For the tempering: 1 tsp coconut oil ½ tsp mustard seeds 1 tsp urad dal 1 sprig curry leaves

Place the beetroot, moong dal, salt and water in a pressure cooker and cook it for four whistles.
Meanwhile, place the coconut, red chillies, cumin seeds and curry leaves in a mixer jar and grind to a coarse paste.
Once the beetroot-moong dal mix is cooked, place it back on a low heat and add the spice-coconut paste.
Heat coconut oil in a small spoon, then add mustard seeds, urad dal and curry leaves. Let them splutter.
Add the tempering to the Beetroot Kootu, mix well and serve while hot with rice.
