You must have eaten raw mangoes, prepared a fruity smoothie, or even had them for pickles. However, have you tried mango curry? South Indian mango curry recipe is a melange of sweet and tangy mango pulp and Indian whole spices. Here is a must-try recipe for this summer season.
1 tablespoon coconut oil 1-inch ginger ½ teaspoon red chilli powder 2 ripe mangoes 1 cup coconut milk 1 chopped onion 8-10 curry leaves 1 teaspoon mustard seeds Salt to taste 1 teaspoon coriander spices 1 teaspoon cumin powder 3 garlic cloves ½ teaspoon turmeric powder 1 tablespoon coriander leaves 2 dry red chillies
Heat oil in a kadhai and add mustard seeds to it. Once they start to splutter, add curry leaves, cumin seeds, and dry red chillies. Saute the ingredients.
Fold in onions, ginger, and garlic. Saute until onions become translucent. Add coriander powder, turmeric powder, and red chilli powder.
Add mango chunks to the mixture and saute until the combination becomes gooey and thick.
Pour in coconut milk and sprinkle salt to taste. Let the curry simmer for at least 10 minutes.
Taste the curry and balance spices and salt before you turn off the flame. Add some water to adjust consistency if needed.
Garnish the mango gravy with fresh coriander leaves and serve it with steamed rice and roti.
