Coconut rice is a soulful indulgence for people who crave a spiced dish but do not want to spend hours in the kitchen making it. Make South Indian-style coconut rice with this quick recipe.
1.5 cups grated coconut 1 cup uncooked rice 1 dried red chilli 1-2 chopped green chillies Salt to taste ½ tsp mustard and cumin seeds 1 tsp ginger A pinch of hing 10-12 cashews 1 tbsp chana dal 7-8 curry leaves ½ tsp urad dal 2 tbsp ghee
Cook rice in a pan or pressure cooker and allow it to cool off so that each grain falls separately.
Take a heavy bottom kadhai, and heat oil in it. Saute green chillies, red chilli, mustard seeds, curry leaves, and cumin seeds.
Add ginger, hing, urad dal, and chana dal to the mix. Saute ingredients until lentils turn brown and crispy.
Meanwhile, in a small pan, dry roast or ghee roast cashews until they are brown.
In the kadhai, combine cooked rice, brown cashews, and coconut. Add salt to taste, sprinkle water, and put on the lid.
After 5-6 minutes of cooking on a medium flame, turn off the gas. Enjoy the rice hot with chutney.
