Baingan pakora, or eggplant fritters, are a popular South Indian snack that people often pair with their evening tea. While baingan is a healthy ingredient, you can make the snacks even healthier by using an air fryer.
2 eggplants 1 cup besan ½ teaspoon turmeric powder ½ teaspoon cumin powder ½ teaspoon coriander powder A pinch of hing 1 tablespoon chopped curry leaves Salt to taste Oil for frying
Wash and pat dry the eggplants and slice them into thin circular disks.
Make the batter by mixing besan, chopped curry leaves, turmeric powder, cumin powder, coriander powder, hing, salt, and water.
Preheat an air fryer or heat some oil in a kadhai.
Coat the baingan slices with the batter and fry them till they are crispy.
Pair the baingan pakore with your favourite chutney and enjoy.
