Stuffed idli is among the easiest and healthy snacks you can make either in the evening or morning. It is lightweight, delicious, and does not require much effort in the kitchen. Here is a quick recipe for you to try out.
2 cups idli rice Salt to taste 1 cup grated coconut 1 teaspoon cumin seeds A pinch of asafoetida 2-3 green chillies 1 cup urad dal Water as required Curry leaves ½ cup roasted peanut 1 teaspoon mustard seeds
Rinse rice and dal and soak them for 4-6 hours. Drain the water and make a smooth paste with a thick consistency. Add salt to it, and allow it to ferment for another 8 hours at least.
Heat oil and add curry leaves, chopped green chillies, cumin seeds, and asafoetida to the mixture.
Add crushed peanuts and grated coconut to the mix as well. Saute the ingredients, turn off the heat after a few minutes, and let the mixture cool down.
Grease the idli pan and add batter to each mould. Do not fill the moulds completely.
Add stuffing in each mould and top it with some more batter. Close the lid and let idlis cook for 12-15 minutes.
Serve stuffed idlis with coconut and tomato chutneys.
