5 tbsp vegetable oil Pinch of asafoetida 1 tsp cumin seeds, turmeric 2 tbsp gram flour/ chickpea flour 1 ½ tbsp tamarind paste ½ Kashmiri chilli powder ½ tsp fenugreek seeds 12 curry leaves 2 green chillies slit lengthwise 1-inch grated ginger 2 tbsp jaggery 100 grams of bhindi 250 grams of boiled potatoes Salt to taste Coriander for garnish
Slit bhindi lengthwise and saute it in a kadhai. Turn off the heat after 5-10 minutes, and keep it aside.
Heat oil in a saucepan and saute fenugreek seeds, cumin seeds, hing, green chillies, and curry leaves.
Turn the heat to a low setting and add water to the pan.
Add jaggery and tamarind solution to the pan and let ingredients simmer for 5 minutes.
Add boiled potatoes and bhindi to the pan and cook ingredients for another 10 minutes.
Adjust the consistency of water and serve the kadhi hot with steamed rice.
