This Diwali, instead of purchasing adulterated kaju katli from sweet shops, make it at home. If you are looking for a recipe, don’t waste your time because Chef Ranveer Brar has an easy one on his YouTube channel.
2 cups cashew powder ¾ cups sugar 1/2 cup water ¼ cup milk A pinch of saffron Silver vark
Keep cashews in the refrigerator for 10 minutes before grinding to make sure they do not release oil.
Pass the powder through a sieve to receive the finest blend of cashews.
In a saucepan, heat milk, water, and sugar. Milk will enhance the colour and add to the creaminess.
Once the sugar is dissolved, add cashew powder and keep stirring on a medium flame.
Once the cashew paste starts binding and leaving the surface of the pan, spread it on a butter paper.
Sprinkle saffron and spread silver vark. Let the kaju katli settle at room temperature before cutting it.
