Gatte ki sabzi is a traditional Rajasthani dish that you can add to your lunch or dinner menu when you don’t have fresh vegetables in the kitchen. Made with besan (chickpea flour) gatte (dumplings), the sabzi features a creamy gravy that you can have with a roti or rice.
For Gatte: Besan - 2 cups Water - 4 tablespoons Oil - 1 tablespoon Red chilli powder - 1/2 teaspoon Coriander powder - 1/2 teaspoon Ajwain (carom seeds) - 1/4 teaspoon Turmeric powder - 1/4 teaspoon A pinch of hing For the Sabzi: Curd - 1 cup Water - 1 cup Oil - 2 tablespoons Coriander leaves - 2 tablespoons Coriander powder - 1 tablespoon Cumin seeds - 1 teaspoon Turmeric powder - 1/2 teaspoon Red chilli powder - 1 teaspoon
Knead a dough for gatte with besan, oil, water, red chilli powder, turmeric powder, coriander powder, carom seeds, hing, and salt.
Roll the dough to make cylindrical gatte and cook them in boiling water for about 5 minutes.
Take them out and drain the extra water. Set them aside till you prepare the gravy.
In another pan, heat some oil and add cumin seeds, bay leaf, cloves, cinnamon sticks, and cardamoms. Then add the other spices like turmeric powder, red chilli powder, and coriander powder.
Add curd and water to the spices and let the mixture simmer.
Now, mix in the gatte, add salt as per your taste, garnish with coriander leaves, and enjoy.
