Feel free to change the shapes to make the dishes more interesting. The traditional flavours of palak and paneer are wrapped up in a flaky paratha in this delicious fusion meal. The flavourful filling makes a tasty and full meal that combines old and new ideas.

For The Dough 1 cup whole wheat flour 1 cup plain flour Salt to taste 1 tsp oil for kneading Maida for dusting

1 ¾ cups grated paneer ½ cup chopped and blanched spinach ½ cup diced mozzarella cheese ¼ cup finely chopped onions 1 ½ tsp finely chopped green chillies 2 tbsp finely chopped fresh coriander Salt and to taste ¼ tsp garam masala 1 tsp chaat masala 3 ½ tbsp butter for cooking
Mix together some maida and water to form a slurry. Knead the dough and roll a chapati.
Spread a tiny square of filling in the middle using a spoon. Now fold in the sides and bottom to completely enclose the filling. Use the slurry on the edges to ensure a secure hold. This will create a lifafa.
Place this lifafa on a hot tawa. Spread butter on it and let it brown on all sides while cooking. You can now enjoy your paneer lifafa paratha. Serve with your favourite chutney or curd.
