Over the past decade, the world has learnt a lot about PM Narendra Modi’s favourites when it comes to food. Being a vegetarian, he has often shared his fondness for Gujarati cuisine. Here is the recipe for Marwari pulao, which is among the Prime Minister’s most preferred indulgences.
2 tablespoons ghee 2-3 cloves 1 cup basmati rice 1 green chilli Salt to taste 1 bay leaf 1 teaspoon cumin seeds ½ cup vegetables 2 cups water 1 sliced onion 2-3 cardamoms 1-inch cinnamon stick ¼ cup cashews 1 teaspoon ginger-garlic paste ½ teaspoon turmeric powder 1 teaspoon garam masala ½ teaspoon coriander powder ½ teaspoon red chilli powder
Heat ghee in a pressure cooker and add cumin seeds, cloves, cardamoms, bay leaf, and cardamoms to it. After sauteing, add onions and green chillies.
Once onions become translucent, add ginger-garlic paste and turmeric powder. Saute the mixture until the strong aroma goes away.
Add vegetables, raisins (optional), and cashews to the mix. After splashing water, allow the vegetables to cook and tenderise.
Drain water from soaked rice and saute with vegetables for a couple of minutes. Add garam masala, red chilli powder, and coriander powder.
Pour water and add salt to taste. Wait for the whistle to go off on high flame. It will take about 10-15 minutes.
Garnish pulao with fresh coriander leaves and serve with your favourite raita.
