Varan Bhaat is a popular dal preparation in Maharashtra and Goa. Lentils are cooked with a couple of spices and served with rice, making it a comfort meal to savour on a lazy day. Here is a quick recipe for you to try out when bored with regular dal chawal.
2 medium chopped tomatoes ½ arhar dal ¼ teaspoon turmeric powder 1-2 slit green chillies 2 tablespoons ghee ½ teaspoon cumin and mustard seeds 8-10 curry leaves A pinch of asafoetida 2 tablespoons coriander leaves Salt to taste
Rinse dal with tap water at least twice and soak it for half an hour before cooking in the pressure cooker along with turmeric powder, water, salt to taste, and tomatoes.
When the pressure settles, open the cooker and mash the content. Add some water to adjust the consistency, and let it simmer on low flame.
Heat oil in a saucepan, and wait for mustard and cumin seeds to crackle.
Saute hing, green chillies and curry leaves until the leaves become crispy.
Add the tempering to the dal and let it simmer for at least five minutes on low flame so that it absorbs all the flavours.
Garnish varan bhaat with coriander leaves and serve it hot with steamed rice.
