Kashmiri cuisine is known for its flavours and local ingredients like lotus stem (nadru). To make a healthy and crispy snack, you can make nadru ke kebab to get a taste of Kashmir’s traditional dish.
500 gms lotus stems (nadru) 2 potatoes 1 onion 2 tbsp chopped ginger 2 tbsp chopped garlic 2 green chillies 1/2 cup chopped coriander leaves 1 tsp cumin powder 1 tsp coriander powder 1/2 tsp fennel powder 1/2 tsp garam masala Salt to taste Oil for frying
Rinse and grate lotus stems. Mix it with mashed potatoes, chopped onions, ginger, garlic, and green chillies.
Add cumin powder, coriander powder, fennel powder, garam masala, and salt. Mix well.
Heat some oil for frying. Take small portions of the mixture and shape them into patties.
Shallow fry each patty till it is golden brown. You can also air fry to make it healthier.
1. Arrange the crispy kebabs, garnish with coriander leaves and serve with a chutney.
