Preparing lunch can be a hassle, especially in summer when you don’t want to be near fire at any cost. For those lazy and hot afternoons, try a Karnataka-style pulao recipe for a nutritious meal preparation.
For Paste ¼ onion ¼ cup coriander leaves ½ inch cinnamon ¼ star anise ¼ cup mint leaves 6 garlic cloves 1-2 cloves 1.5 tablespoons of chopped ginger 1-2 cardamoms 1-2 Marathi moggu 4-5 green chillies
For Pulao 1 small tomato 1 cup sona rice ¼ teaspoon turmeric powder 1 bay leaf 1 onion ½ lemon 10-12 chopped beans 1 carrot ½ teaspoon coriander powder 1 teaspoon ghee ½ cup cauliflower 1 potato Salt to taste
Immerse cauliflower in hot water and salt, while you chop vegetables. Meanwhile, rinse and soak the rice for 10 minutes.
Heat oil in a pressure cooker, and add bay leaf and chopped vegetables to it.
While the vegetables are cooked, grind the ingredients for the paste. You should achieve a smooth combination.
Once the vegetables are half cooked, pour the aromatic paste and let the ingredients simmer at low flame.
Add boiling water, soaked rice, and cauliflower to the pressure cooker. After two whistles, turn off the flame.
Serve the Karnataka-style veg pulao with your favourite raita.
