Ingredients

4 large tomatoes 1 cup cooked quinoa or rice 1/2 cup crumbled feta cheese 1/4 cup chopped fresh basil 1/4 cup chopped fresh parsley 2 cloves garlic 1/4 cup pine nuts Salt and pepper to taste Olive oil for drizzling Grated Parmesan cheese

Step 1

Preheat your oven to 375°F (190°C).

Make your tomatoes hollow.

Step 3

Then, combine the cooked quinoa or rice, crumbled feta cheese, chopped basil, chopped parsley, minced garlic, and toasted pine nuts and add salt.

Next, Stuff each hollowed-out tomato with the quinoa or rice mixture and drizzle olive oil. Bake it for about 20-25 minutes.
