Gajar ka halwa, a winter favourite, is a sweet dish made with grated carrots and milk, widely loved in Indian households. It's also known as "carrot pudding" in some countries. Try this simple pressure cooker recipe for gajar halwa to enjoy the dessert without any hassle.

2 cups grated carrots 1 cup of milk 1/2 cup sugar 2 tablespoons of ghee 1/4 cup chopped nuts (almonds, cashews, pistachios) 1/2 teaspoon cardamom powder A pinch of saffron strands (optional)

Peel and grate carrots. Combine with milk in a pressure cooker on a stove. Cook for 1–2 whistles over medium heat. This expedites the boiling of the carrots.

When the pressure has been released, open the pressure cooker and stir the carrots. Cook on medium heat with sugar and ghee, stirring regularly to prevent sticking.

Cook until the sauce thickens and the carrots are soft and tender. This could take up to 15–20 minutes.

Add the chopped almonds, cardamom powder, and (if using) saffron strands. Cook for an additional 5-7 minutes, or until the halwa reaches the desired consistency.

Turn off the heat when the halwa has thickened and reached a pudding-like consistency. Serve the halwa with some additional nuts on top.
