Whether winter or summer, a hot bowl of soup is like a warm hug from an old friend or loved one. It can instantly uplift your mood, beat hunger pangs, and leave you feeling satiated. Here is a creamy oyster mushroom recipe that is a must-try for lazy and uneventful evenings when you just want to enjoy your company.

2.5 cups oyster mushroom washed and soaked 3 tablespoons extra virgin olive oil 1 cup roughly chopped shallots 4-5 roughly chopped cloves of garlic 1 teaspoon dried rosemary 1 teaspoon dried oregano 1 teaspoon dried thyme 1 tablespoon tomato paste 1.5 cups coconut milk Salt to taste 2 teaspoon black pepper 2.5 cups vegetable broth Chopped coriander leaves

In a hot pan, add oil. Then add shallots, garlic and tomato paste. Let everything cook for 1 minute.

Add the soaked mushrooms and all the dried herbs and seasonings to the mix. Cook and pour in vegetable broth and coconut milk one after the other.

Cook for 2 minutes and let the mixture rest. After it has cooled a bit, blend it all into a smooth paste.

Strain using a sieve. You can add a little bit of water if needed to adjust the consistency.

Add a little bit of olive oil to a hot pan and add the strained liquid.

Cook for another 2 minutes, garnish with coriander leaves and garlic sautéed oyster mushroom. Enjoy.
