4 medium potatoes, boiled and peeled 2 tbsp mustard oil 1 tsp cumin seeds (jeera) 1/2 tsp turmeric powder (haldi) 1 tsp red chilli powder 1 tsp coriander powder (dhania) Salt to taste Fresh coriander leaves, chopped
Cut the boiled and peeled potatoes into medium-sized cubes. Heat mustard oil in a kadhai or deep pan until it begins to smoke slightly.
Add cumin seeds and let them splutter. Then add turmeric powder, red chilli powder, and coriander powder. Add the potato cubes to the pan and mix well to coat them evenly with the spices.
Add salt to taste and cook for a few minutes until the potatoes are slightly crispy. Garnish with chopped coriander leaves and serve hot.
