There is nothing more comforting than a hot bowl of potato gravy paired with either rice, roti, or paratha. Taking to her Instagram, actor Bhagyashree shared her husband’s favourite dish - aloo pudina. Try this curd-based dish that will digest quickly and leave you feeling satiated.

Mix Curd

Beat curd in a small bowl until it is smooth and has no lumps. Keep it aside while you prepare the tempering.

Temper

In a hot kadhai, add oil, cumin seeds, and asafoetida (hing). Both ingredients help to improve digestion.

Pour Curd

Once the cumin seeds crackle, pour the curd into the kadhai. Add turmeric powder, red chilli powder, and coriander powder.

Keep Stirring

Keep stirring the spices and curd. It will prevent curd from curdling and allow the spices to cook well.

Add Mint Leaves

Add coarse powder of dry mint leaves to the curry. It will infuse fresh flavours into the dish and boost your immunity.

Add Potatoes

Take 2-3 medium potatoes, dice them, and add to the curry. Add salt to taste now and cook for 12-15 minutes.

Garnish

Once the potatoes have softened, add freshly chopped coriander leaves, and serve the curry hot with roti, paratha, and rice.
