Tried Of The Traditional Sooji Halwa? Try This Rava Kesari Today

Rava Kesari is a traditional sweet delicacy that is often served as a part of a festive meal or as a dessert on special occasions. Rava Kesari is made by first roasting rava or sooji in ghee then cooking it in hot water then adding sugar and flavourings. It is a sooji halwa hailing from South India. Ingredients

1 Cup Sooji / semolina 1 cup sugar 1/2 + 1/4 cup ghee 25 gms cashews 15 gms raisins 1/4 tsp Kesar/ Saffron 1 tsp sugar 3 cups water 4-5 green cardamom crushed or 1/4 tsp cardamom powder

Step 1

Heat 1/2 cup ghee and fry the cashews for 20 seconds then add raisins and fry for 10 more seconds. Remove from the ghee

Step 2

Add Sooji and saute for 3-4 minutes over a high flame. Keep stirring the sooji and till it is aromatic and the colour slightly changes. Remove the sooji from the kadhai.

Step 3 

Pound kesar with 1 tsp sugar.

Step 4 

Heat 3 cups and bring to a simmer. Add crushed kesar and 1 cup sugar. When the sugar dissolves, reduce flame to low

Step 5

Gradually add the sooji and stir. Increase the flame to medium and stir well.

Step 6

When the sooji starts to leave the bottom of the kadhaim add 1/4 cup ghee and fried cashews and raisins

Step 7 

Give it a good mix and turn of the flame. Add cardamom powder

Give it a quick mix and the rava Kesari is ready.
