Fermenting dosa batter in winter requires creating the right environment to encourage the growth of natural bacteria. Utilising insulated containers, warm surroundings, and moisture retention techniques helps maintain the right temperature, ensuring that the batter ferments properly for soft, fluffy dosas.
Place the batter in a warm spot in your kitchen, such as near the stove or on top of a refrigerator. You can also use an oven with the light on to create a warm, controlled environment.
Transfer the batter into a thermos or an insulated container to keep it warm and allow for slow fermentation. This helps maintain the temperature and encourages better fermentation.
When grinding the rice and urad dal, use lukewarm water (not hot) to help activate the yeast and bacteria in the batter. This can help kickstart the fermentation process.
Cover the batter with a damp cloth or a lid to trap moisture and heat, which aids in fermentation. Avoid using a tight-fitting lid, as air circulation is essential.
If you have a space heater, place the batter near it (but not too close). Alternatively, you can place the batter on a heating pad set to low to maintain warmth.
Soaking a few fenugreek seeds along with the rice and urad dal can help boost fermentation, especially in colder weather.
Allow the batter to ferment overnight. If the temperature is too low, you may need to give it an extra few hours, so plan accordingly.
