Obbattu, also known as Puran Poli or Holige, is a South Indian sweet flatbread made of a soft outer dough and a sweet, flavourful filling of lentils and jaggery mash.
For The Dough: 1 cup all-purpose flour (maida) 2 tablespoons chana dal flour (optional) ¼ teaspoon turmeric powder 2 tablespoons oil or ghee Water as required For The Filling (Obbattu): 1 cup chana dal 1 cup jaggery, grated ½ teaspoon cardamom powder Pinch of nutmeg powder (optional)
Mix flour, turmeric, and oil. Add water, knead into a soft dough, and let it rest for 1 hour.
Cook chana dal until it softens. Drain the excess water and mash it.
Heat jaggery, then mix it in dal, cardamon and nutmeg and cook until it thickens.
Take a small dough, fill it with the mixture, seal it and roll it into a thin disc.
Roast the Obbattu in a hot tawa until it turns golden brown.
