Traditional Maharashtrian Moong Usal For A Healthy Dinner

Moong usal or mugachi usal as it is called traditionally in Maharashtra is a healthy sprout dish that is often enjoyed for its flavour and health benefits. It is a common meal in Maharashtrian homes and comes together fairly quickly.

Ingredients

1 cup sprouted moong 1 onion 1 tomato 2 green chillies 1/4 cup grated coconut 1 tsp mustard seeds 1 tsp cumin seeds 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1/2 tsp garam masala 1/2 tsp coriander powder 1/2 tsp cumin powder Pinch of asafoetida (hing) Salt to taste 2 tbsp oil 2 tbsp coriander leaves Juice of 1/2 lemon 1 cup water

Step 1

Heat oil, and add mustard seeds. When they splutter, add cumin seeds and asafoetida. Add onions and green chillies, and sauté until translucent.

Step 2

Add tomatoes, turmeric, red chilli, coriander, cumin powder, and salt. Cook until tomatoes soften. Add sprouted moong and 1 cup water. Boil, then simmer for 10-15 minutes.

Step 3

Add garam masala and coconut. Cook for 2-3 minutes. Turn off the heat, add lemon juice and garnish with coriander leaves.

Step 4

Serve hot with roti or rice.
