Loaded with green peas and mild spices, baked to perfection, this traditional Gujarati snack gets a healthy twist just so you can savour it without guilt. Check out the recipe and try it now!

2 cups green peas, shelled ½ tsp cumin seeds ¼ tsp asafoetida ½ tsp ginger paste 2 green chillies, finely chopped 2 tbsp coconut, grated 2 tbsp coriander leaves, chopped 1 tsp sesame seeds ½ tsp sugar Salt to taste 2 tsp oil

For the dough: ¾ cup refined flour ½ cup wheat flour ½ tsp salt 2 tbsp ghee Water, as required Oil, for basting

To make the dough, place the flours, salt and ghee in a large bowl. Add water gradually to make a tight dough.

Heat oil in a wok, then add the cumin seeds, asafoetida, ginger paste and green chillies.

Once the raw ginger smell goes away, add the peas, salt and cook until the peas are done. Mash them up a bit.

Now add the coconut, sesame seeds and coriander leaves. Mix well and let the stuffing rest.

Divide the dough into equal-sized balls and roll them out into circles.

Place a spoonful or two of the stuffing, then use water to seal the edges like you would a Gujiya.

Place the stuffed Ghughras on a lined baking sheet, brush some oil on them and bake doe 30 minutes at 180 degrees.
