Muthiya, or muthia, is a popular Gujarati snack that is prepared using pantry staples and traditionally enjoyed with a cup of tea, coffee, or along with condiments such as yoghurt, sauce, or chutney. Here's a recipe for you to try:
1 cup whole wheat flour 1/2 cup chickpea flour 1 cup grated bottle gourd (or spinach, methi, or cabbage) 1/4 cup of yoghurt 2 tablespoons of oil 1 teaspoon of ginger paste 2 green chillies 1 teaspoon turmeric powder 1 teaspoon chilli powder 1 teaspoon of cumin seeds 1/2 teaspoon baking soda 1 tablespoon of sugar 1 tablespoon of lemon juice Salt to taste
For Tempering: 2 tablespoons of oil 1 teaspoon of mustard seeds 1 teaspoon sesame seeds A pinch of asafoetida (hing) 8-10 curry leaves
Mix all the ingredients into a soft dough.
Shape the dough into cylindrical rolls and steam for 15-20 minutes. Cool and slice.
Heat oil, add mustard seeds, sesame seeds, asafoetida, and curry leaves. Add muthiya slices and toss until slightly crispy.
Serve hot with tea, coffee, green chutney or yoghurt.
