Handvo is a traditional Gujarati cake made of several vegetables and fermented rice. Unlike most cakes, it is savoury and is an essential part of Gujarati cuisine. Here's a recipe for you to try:
Batter: 1 cup rice 1/2 cup chana dal 1/4 cup toor dal 1/4 cup urad dal 1/4 cup moong dal 1/2 cup sour yoghurt 1/2 cup grated bottle gourd 1/2 cup grated carrot 1/2 cup grated zucchini 1/4 cup chopped coriander 2-3 green chillies, chopped 1-inch ginger, grated 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp sugar Salt to taste 1 tsp baking soda
Tempering: 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1 tbsp sesame seeds Asafoetida (hing) Curry leaves
Soak rice and dals for 6 hours. Drain and grind coarsely. Ferment with yoghurt for 8 hours.
Add grated vegetables, spices, salt, and Eno to the batter.
Heat oil, add mustard, cumin, sesame seeds, asafoetida, and curry leaves.
Pour batter into a greased dish, add tempering, and bake at 180°C (350°F) for 35-40 minutes.
