Gud Wala Sitaphal ki sabzi is a delicious Indian dish combining the sweetness of jaggery with the savoury taste of pumpkin, perfect for a hearty meal.
500 grams pumpkin (sitaphal), peeled and diced 2 tablespoons jaggery (gud) 1 tablespoon ghee 1 teaspoon cumin seeds 1 teaspoon mustard seeds 2 green chilies, slit 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder Salt to taste Fresh coriander leaves, chopped
Heat ghee in a pan and add cumin and mustard seeds. Let them splutter. Add slit green chilies and sauté for a minute.
Add diced pumpkin, turmeric powder, red chili powder, and salt. Mix well. Cover and cook on low heat until the pumpkin is tender.
Add jaggery and cook until it melts and blends with the pumpkin. Garnish with chopped coriander leaves and serve hot.
