Traditional Boondi Laddu Recipe For The Ideal Post-Meal Dessert

Laddu is one of the quintessential desserts of India and is popularly enjoyed at festivals and celebrations. This sweet has many varieties but boondi laddu is the one that’s most commonly seen. Here's an easy for you to try:

Ingredients

1 cup besan (gram flour) 1 1/2 cups sugar 1/4 tsp cardamom powder A pinch of saffron strands (optional) 2 tbsp chopped nuts Ghee or oil for frying

Step 1

Mix besan with water to make a smooth batter.

Step 2

Boil sugar with water until it reaches one-string consistency. Add cardamom powder and a pinch of saffron strands (optional).

Step 3

Heat ghee or oil in a deep pan. Pour batter through a perforated spoon to make small droplets. Fry until golden and crisp. Drain on paper towels.

Step 4

Mix the fried boondi in the warm sugar syrup. Add 2 tbsp chopped nuts (almonds, pistachios) and mix well. Once the mixture cools slightly and is easy to handle, shape it into small laddus.
