Discover the secret to making creamy, delicious Bengali Paayesh at home. This traditional rice pudding, flavoured with cardamom and garnished with nuts, is a must-have for special occasions.
3 tbsp Gobindobhog rice 2 tsp ghee 4 cups whole milk (full-fat) ¼ cup white granulated sugar (adjust to taste) ½ tsp cardamom powder 10-12 chopped cashew nuts 10-12 slivered pistachios 10-12 slivered almonds
Rinse the rice and soak it in ½ cup of water for 15-20 minutes. Drain the water, mix the rice with ghee, and set it aside.
Heat the milk in a heavy-bottom pan over medium-high heat until it boils.
Reduce the heat to low and add the rice. Cook until the rice is tender and the paayesh thickens, stirring frequently.
Add sugar to the paayesh and cook for another 3-4 minutes, stirring well.
Mix in the cardamom powder, then garnish with cashew nuts, and almonds before serving.
