Malpua is a Bengali classic that adds a festive touch to any occasion. This traditional dessert is a deep-fried pancake soaked in sugar syrup, often flavoured with fennel seeds and cardamom. It’s a must-have during Holi and Diwali and a taste of authentic Bengali cuisine.
1 cup Maida 2 tsp Sooji 1 cup Milk 1 cup Sugar ½ cup Water ½ tsp Fennel seeds ¼ tsp Cardamom powder Ghee Chopped nuts for garnishing
In a bowl, mix maida, sooji and milk. Add fennel seeds and cardamom powder. Let it rest for 30 minutes.
Heat water and sugar in a pan. Stir until sugar dissolves completely and reaches one-string consistency.
In a deep pan, heat ghee for frying. Pour a ladleful of batter into the hot ghee and fry until golden brown on both sides.
Soak the fried malpuas in the warm sugar syrup for a few minutes. Garnish with chopped nuts and serve warm.
