Too Hot To Cook? Enjoy This No-Cook Prawn Ceviche For Lunch

Prawn or shrimp ceviche – as it is popularly known – is a citrus-loaded ‘salad’ of sorts that combines plump, fresh prawns with lots of lime juice. Savour this as an accompaniment to pieces of hot toast or some potato chips, for the perfect light lunch or snack.

INGREDIENTS

250 grams fresh prawns, cleaned ½ onion, sliced 2 jalapenos, chopped 1 cup cherry tomatoes, halved 1 small cucumber, chopped 1 avocado, diced ¾ cup lime juice 3 tablespoons orange juice Salt and pepper, to taste

STEP 1

Cut the prawns into halves and add to a bowl along with the lime juice, orange juice and salt.

STEP 2

Mix well to combine and allow it to rest in the refrigerator for 90 minutes.

STEP 3

Once the colour of the prawns are an opaque white, combine the remaining ingredients in the bowl.

STEP 4

Transfer to a serving plate and enjoy chilled or at room temperature.
