Tofu Mushroom Bhurji: A Spicy Vegan Breakfast Scramble

Perfect for days when you need to rustle up a quick breakfast in-between the Monday rush, this plant-based breakfast option is nutritious and high on taste.

INGREDIENTS

100 grams tofu, grated 7-8 mushrooms, sliced ½ onion, chopped 2 green chillies, chopped ½ tomato, chopped ½ teaspoon turmeric powder 1 teaspoon red chilli flakes 2 cloves garlic, minced 1 tablespoon vegetable oil Salt and pepper, to taste

METHOD

Heat the oil in a pan and sauté the onions and garlic, until aromatic and lightly browned.

Add the green chillies, followed by the tomatoes and cook until mushy.

METHOD

To this, add the spices and the sliced mushrooms and cook until the liquid from the mushrooms has evaporated completely.

METHOD

Season with salt and pepper before tipping in the tofu and stirring well to combine.

METHOD

Sprinkle a teaspoon or two of water and let everything cook with a lid on, for 3-4 minutes. Serve warm with toast.
