Freezing the chopped veggies and fruits is a good option because you can easily defrost them and use them.
Cook and store the veggies to use then whenever you like if you think the chopped raw ones are getting stale.
Store the veggies in airtight boxes or paper towels to keep the moisture away.
Coat your veggies with lemon to make them last really long.
