Usually, the drop in temperatures makes the task of setting curd difficult. But here are few tips to make your task easier.
It's better to set curd in a casserole, as the insulated container doesn’t let the heat escape, hence promoting bacteria growth.
Pouring some warm water in a casserole and then placing the vessel with the ingredients will give better results.
Heat up the milk a little more than lukewarm before adding a starter to it.
In winter, just double the amount of starter added to the milk to get the desired result.
Since mornings are warmer, it’s the best time to set curd. As the higher temperature helps in setting the curd faster.
