Pineapple Kesari is a delightful South Indian sweet made with semolina, sugar, and pineapple. This smooth, tangy dish is infused with the aroma of cardamom and enriched with cashews and raisins.
½ cup finer unroasted rava (sooji) ½ cup sugar 1.5 cups water 4 tbsp ghee 12-15 cashews 1 tbsp raisins ¼ tsp green cardamom powder ¾ cup chopped pineapple 1-2 tbsp chopped pineapple (for garnish) 1-2 drops natural yellow food colour or 10-12 strands saffron (optional) 1-2 drops pineapple essence (optional)
Chop the pineapple into small cubes and set aside.
Boil water with pineapple cubes, sugar, and optional food colour or saffron until the sugar dissolves.
Heat ghee in a pan, add cashews, and roast until golden brown.
Add rava to the pan, mix well, and roast until fragrant and lightly golden.
Pour the hot pineapple-water mixture into the roasted rava, stirring quickly to avoid lumps.
Add raisins and simmer until the rava absorbs all the water and softens completely.
Serve the Pineapple Kesari hot, garnished with chopped pineapple or cashews for a vibrant finish.
