Crispy fried onions or Birista is a versatile condiment that can be used as a garnish, as a topping over salads, and as an ingredient in various dishes. Here's how to make them at home.

2-3 onions 2 tsp cornflour 1 cup vegetable oil

Peel and thinly slice the onions. Separate them using your fingers and palm. Add the oil to a deep kadhai and put it on high heat.

In a mixing bowl, toss the onions with cornflour. This helps crispen the onions further.

Add the onions to the oil once it's hot enough. Fry them till they're browned all around.

Strain them from the hot oil using a spyder and let them drain on a paper towel. Store them in ziplock bags or airtight glass containers when completely cooled.
