Cleaning the fish is the most important step. Wash it [properly and remove all the scales.
Marinate the fish with salt and turmeric so that it is well seasoned.
Do not fry the fish too much, it makes it chewy. While frying less will mean the fish might break while cooking.
When frying the fish, always put on the highest flame initially. The fish breaks otherwise.
While making steamed fish, make sure that the flame is low and you do stir it continuously.
