To mix the butter evenly, cut the refrigerated butter into small dices. This increases the surface area and helps to get a smooth mixture.
It is necessary to create small air pockets in the dough to get it aerated. So while creaming butter with sugar, make sure you use a hand beater and then add the mixture to sieved flour.
Always measure the portions. Do not alter the portions depending on your discretion. Follow standard sizes of utensils while putting the ingredients.
Ovens differ from one another, so getting the correct temperature is crucial for the perfect cookies. Invest in an oven thermometer that will ensure the right temperature.
Use parchment paper which acts as an insulator between the baking sheet and the cookie and prevents over-browning.
Once baked, transfer the cookies onto a cooling rack. Else the condensation from steam let off by the cookies gets absorbed in the bottoms if left on the baking sheet, making them softer.
