This Rajasthani recipe is a great reminder of the Royal Marwadi cuisine. With its amazing taste and rich flavour, this delicious mutton curry is a treat for taste buds.
1 kg mutton (washed, cleaned) 12-14 garlic cloves 4 medium chopped onion 1 tbsp turmeric 4 green cardamom 6 cloves 1 handful coriander leaves Water as required
6 green chillies 2 inches ginger 6 tbsp refined oil 1 tbsp red chilli powder 1 tbsp cumin 3 tbsp coriander seeds 1 tbsp pepper 2 tbsp salt
To prepare tikri mutton, take a large mixing bowl and add mutton pieces to it. Add a tbsp of refined oil, turmeric, red chilli powder and salt.
Mix all the ingredients together, and marinate for 30-45 minutes. Meanwhile, grind raw spices and other ingredients separately.
Now, take a food processor, and grind 3 cardamoms, cloves, cumin, 1 tbsp coriander seeds, 1 tbsp pepper, and 5-6 garlic cloves together and set aside.
Next, grind a handful of coriander along with green chillies, 8-9 cloves of garlic, ginger, along with 2 tbsp of oil and salt.
Heat leftover oil in a pan over medium flame, add chopped onion and saute till semi-translucent. Then, add the prepared ground spice powder into it along with a little water.
Cook till the oil begins to separate from masala, and then, add the marinated mutton pieces. Saute the mixture, adjust salt and water.
Now, add the other ground ingredients prepared in step 3. Cover the lid and let it cook for 45-60 minutes and then transfer it to a serving dish.
Garnish with fresh coriander leaves and enjoy the delicious Tikri Masala with roti or rice.
