Vada Pav, a beloved street food from Mumbai, is incomplete without its signature dry garlic chutney. This spicy, flavourful chutney enhances the taste of the vada pav, providing a burst of heat and aroma. Here's a simple recipe to make this delightful chutney at home.

Ingredients

10-12 garlic cloves, peeled 1/2 cup grated dried coconut (desiccated coconut) 1/4 cup roasted peanuts 1 tablespoon sesame seeds 1 teaspoon red chilli powder (adjust to taste) 1 tablespoon oil Salt to taste

Step 1

Heat oil in a pan over medium heat. Add the garlic cloves and sauté until golden brown. Remove and set aside. In the same pan, add the grated coconut and roast until it turns light brown and aromatic. Keep aside.

Step 2

Dry roast the sesame seeds in the pan until they begin to pop. Similarly, roast the peanuts until slightly charred. Remove the skins of the peanuts once cooled.

Step 3

In a blender, combine the roasted garlic, coconut, peanuts, sesame seeds, and red chilli powder. Blend to a coarse powder. Add salt to taste and give it a final mix.

Step 4

Store the chutney in an airtight container. It stays fresh for up to two weeks.
