This Himalayan noodle soup is traditionally served with meat or lean chicken. It is not only delicious in taste but also helps in keeping the body warm. Here is an easy recipe to make thukpa at home.

1 carrot, 5 button mushrooms, ¼ cabbage, 100 boneless chicken (cut into cubes), 150 g noodles, 6-8 garlic cloves, 1 ½ inches ginger, 1 onion, 2 green chillies, 2 tbsp oil, 1/2 tbsp red chilli powder, salt to taste, 4 cups chicken stock, 1 tbsp lemon juice, fresh coriander sprigs to garnish

Heat oil in a pan and add garlic, chillies and ginger. Mix well and sauté for a few seconds. Add onion and carrot and sauté again.

Add chicken, mushroom and cabbage and mix well. Season it with chilli powder salt and toss well. Add chicken stock and bring to a boil. Continue cooking for 8-10 minutes.

Add a few drops of lemon juice and serve it with noodles in a bowl. Garnish with coriander sprigs and enjoy.
